Pecan Bars With Shortbread Crust

Crust
- 1 cup unsalted butter melted
- ½ cup powdered sugar
- 2 cups all-purpose flour
- 1 ½ teaspoon vanilla extract
- ½ teaspoon salt
Filling
- 3 tablespoon butter melted
- ½ cup corn syrup light or dark will work
- 2 eggs
- 2 teaspoon vanilla extract
- ½ cup sugar
- ½ teaspoon salt
- ½ cup all-purpose flour
- 2 cups chopped pecans
Crust
Pre-heat oven to 350°F.
Mix together all crust ingredients in a medium size bowl.
Press the crust into a 9x13 glass baking dish, smushing it about until it is evenly spread.
Bake the crust for 15 minutes.
Filling
While the crust is baking, whisk together the eggs, butter, corn syrup, vanilla, sugar, and salt.
Add the flour and mix until just combined.
Finally, fold the pecans into the mix.
When Crust is done, pour the filling over the crust and gently spread it evenly over the surface.
Bake the bars for 20-25 minutes until browned on top and the center only slightly jiggles when the pan is jostled.
Allow to cool before cutting into the bars.
