Pecan Bars With Shortbread Crust

Pecan pie the easy way. They're simple, tasty, and great for a party treat or to just eat at home.

Ingredients
  

Crust

  • 1 cup unsalted butter melted
  • ½ cup powdered sugar
  • 2 cups all-purpose flour
  • 1 ½ teaspoon vanilla extract
  • ½ teaspoon salt

Filling

  • 3 tablespoon butter melted
  • ½ cup corn syrup light or dark will work
  • 2 eggs
  • 2 teaspoon vanilla extract
  • ½ cup sugar
  • ½ teaspoon salt
  • ½ cup all-purpose flour
  • 2 cups chopped pecans

Instructions
 

Crust

  • Pre-heat oven to 350°F.
  • Mix together all crust ingredients in a medium size bowl.
  • Press the crust into a 9x13 glass baking dish, smushing it about until it is evenly spread.
  • Bake the crust for 15 minutes.

Filling

  • While the crust is baking, whisk together the eggs, butter, corn syrup, vanilla, sugar, and salt.
  • Add the flour and mix until just combined.
  • Finally, fold the pecans into the mix.
  • When Crust is done, pour the filling over the crust and gently spread it evenly over the surface.
  • Bake the bars for 20-25 minutes until browned on top and the center only slightly jiggles when the pan is jostled.
  • Allow to cool before cutting into the bars.
